The first historical mention of Hotel Stefanie dates back to the year 1703. A certain Josepha Winkler acquired the "Weisse Rose" (White Rose) at Taborstrasse 12 - the present-day Hotel Stefanie - in 1728. 70 years later, in 1798, the "Weisse Rose" was mentioned in Vienna's first hotel guide. Of all the hotels listed in that guide, only 3 have survived to the present day.

In the 1873 hotel guide, it was listed as having 110 rooms, making it one of the largest hotels in Vienna.
